A few shrimp would be doable, they're light bio-load.

Bichers are highly addictive. Prehistoric looking, full of attitude, what's not to love?

I guess it depends on what price you are looking at, and availability... IMO, red cherry shrimp are pretty, inexpensive, and not overly demanding. Of course, ghost shrimp are much cheaper.

I did a 2.5 with a pair of Apalachicola pygmy sunfish (Elassoma sp. cf. okefenokee) and ghost shrimp. It lived on my bathroom counter and was quite nice.
The pygmy sunnies were ridiculously shy and the tank was creatively covered in algae so I didn't get to see them a whole lot but it made the few times I did get to see them that much more exciting and the ghost shrimp were actually quite fun.
Male pygmy sunny.

One of the pics I'm most proud of:

You could do the south-east Asian version with Dario dario and some Caridina or Neocaridina sp. too.

All I recommend is good filtration and 50% weekly WC's.

Red Cherries are easy and very pretty. I imagine there's a lot of kinds that would look great in there.

I would suggest some sort of neocardina (RCS) and maybe a single dario dario if you're careful. I'd avoid cardina (CRS, tigers, amano, etc) because they get a bit bigger and from the research I've done, are alot more active and not so well suited to smaller tanks.

I have a two and a half gallon tank to, and I would get a Betta (even though you don't want one) or a goldfish. I wouldn't recommend shrimp. And btw, why don't you want a Betta? I luv them!

Goldfish should NEVER be kept in a tank that size.
