I'm leaning away from O.Virilis just because it's unlikely here (Central Texas).  You might be on the right track, though.  There is a Western Painted Crawfish -  Orconectes (Buannulifictus) palmeri longimanus in this general area but I'm not sure if it goes this far west of the Mississippi.

I just got a great shot of the crayfish we call "Big Lobbie" (actually, he used to be called "Little Lobbie" until he grew larger than the other one and we had to switch names).

After stalking my vampire shrimp a bit I finally got a decent picture of him.
Some 4cm long (perhaps longer), still won't come out of his dad gum hole. Click the image for the full version - which is huge, but at least you see him in all his red-blue glory.

From the front. This one looks great full-sized.

From the back. This one's not as good full-sized.

Also, I didn't pour milk all over my tank. For some reason water from the tank leaves white deposits on the outside, and it shows up hard when you use the flash on your camera (by the way, that won't hurt the shrimp's eyes, will it?)

I just did a water change, wiped up that side of the tank and took two more pictures. Here's the better one, cropped:

Petshrimp.net says half a foot maximum, Aqualand PetsPlus says 3-4 inches. They're beastly in size (and apparently become bolder than most shrimp) but they wouldn't hurt anything that isn't under borderline microscopic - those fans and their small mouths mean they can't really eat anything over the size of a flake crumb, and their spiky front legs can't do much else than kick to push other vampires out of spots. Check the surplus topics I started, plus those two sites' articles on them for more info.

PS: They're usually expensive. See Amano/Wood/Flower Shrimp for a similar, smaller, less expensive shrimp. They're a bit more generic-looking, but like I said, they're smaller and less expensive.
